Palma Gin — the one that started it all

Our original release, built around locally foraged juniper, lemon and orange peel, almond flowers, orange leaves, lime peel, lavender and tomato branches, layered with coriander, cassia bark, cardamom and rhubarb root. On the nose it's fresh pine, sticky orange and lavender-like floral notes; on the palate, bright citrus running from woody to sweet, with a long, earthy, gently spiced finish.
Choose this if: you want a true expression of Mallorca in a glass — dry, citrus-forward, and versatile enough for a classic Gin & Tonic, a Negroni, or sipping neat.
Palma Citrus Gin — sunshine in a bottle
ABV: 42% | Style: Organic citrus-forward gin | Price: €45
Built on the same juniper, coriander, orris root, angelica root and liquorice root backbone, then pushed further with lemon and orange peel plus organic additions of mandarin peel, lime peel and lemon balm leaves foraged from Mallorcan orchards. Expect orange and mandarin on the nose, smooth citric sweetness on the palate with a touch of marmalade, and a bright, lingering finish.

Palma Rosé Gin — floral, delicate, unmistakably pink

Same organic core botanicals — juniper, coriander, orris root, angelica root, liquorice root — joined by lemon balm, mandarin, lemon and lime peel, then finished with hibiscus flowers and extra lime peel for its signature colour and character. The result is floral on the nose, with fresh lime and a tart, earthy edge from the hibiscus, and a crisp, uplifting finish with a gentle floral aftertaste.

Palma Spiced Gin — warmth from the barrel

Starts from our foraged Mallorcan botanicals — juniper, citrus peels, almond flowers, lavender, coriander, cassia, cardamom and rhubarb root — then adds a spice blend of cinnamon, cloves and vanilla, before resting in Mallorcan oak barrels previously used for local organic red wine. Think fiery cinnamon and candied orange on the nose, deep spice and vanilla on the palate, and a fruitcake-sweet finish with cellared oak and red wine barrel character.

Monastrell Gin — the limited edition

Our most exclusive release, distilled in a 500-litre copper pot still and infused with organic Monastrell grapes from a local partner vineyard, alongside our full set of foraged Mallorcan botanicals. The nose brings sweet Monastrell grapes with soft floral and citrus undertones; the palate is fruity and richly complex, finishing intense and elegant with a velvety, wine-like texture and subtle lingering warmth.
